    I make these cupcakes often at festival time. The unique flavour of these cupcakes are appreciated by all my guests and family members. Use of Gulkand as a filling, makes these cupcakes more delicious.

    Ingredients

    For cupcakes:

     

    • 1 1/2 cups all purpose flour (maida)
    • 1/3 cup castor sugar
    • 1/3 cup butter(softened)
    • 1/2 cup milk
    • 1/2 cup condensed milk
    • 3/4 tbsp baking powder
    • 1/2 tbsp baking soda
    • 1 1/2 tbsps vinegar
    • 1 tbsp white rose essence

    For Filling

    • 6 tbsps Gulkand (sweet preserve of rose petals)

    For Icing:

     

    • 1 cup chilled soy cream
    • 1 tbsp white rose essence
    • Few drops of pink colour
    • Silver balls for decoration

    Method

    • 1 Preheat oven to 1800C.
    • 2 Sift maida and baking powder together.
    • 3 In a large bowl, mix butter and sugar with an electric mixer until light and fluffy.
    • 4 Add condensed milk and rose essence. Beat again for two minutes.
    • 5 Now add flour mixture (maida and baking powder) and milk simultaneously in butter mixture and mix with spatula (cut and fold method) until just combined.
    • 6 In one cup mix vinegar and baking soda and immediately add in the prepared batter. mix lightly.
    • 7 Spoon the batter in cupcake liners and bake in preheated oven for 16 - 18 minutes on 180*c.
    • 8 After baking, transfer the cupcakes to a wire rack to cool completely.9Now make a hole by apple coarer or by serrated knife from the top of each cupcake and fill this hole by gulkand.
    • 9 To make the whipped cream frosting, beat the cream and essence until soft peak consistency.
    • 10 Spread some cream on top of each cupcakes and levelled with butter knife.
    • 11 Add few drops of pink colour in rest of the whipped cream and mix.
    • 12 Put it in a piping bag and make roses over the cupcakes with star nozzle.
    • 13 Sprinkle some silver balls.

    Measurement unit for baking powder, baking soda, vinegar and rose essence is tea spoon instead of table spoon.
