A rich and delicious soup with velvety texture. This soup is elegant, rich, creamy and insanely easy to prepare. Just mix all the ingredients in a blender, blend and eat. Can a soup get any easier than this?
- 2 avocados
- Juice of one lemon
- 2 spring onion sprigs, finely chopped
- 2 tbsps (tablespoons) coriander leaves
- 2 tbsps mint leaves
- 1 green chilly, finely chopped
- 1-1/2 cups vegetable stock
- 1-1/2 cups chilled butter milk
- 1/2 tsp (teaspoon) cumin powder
- Salt to taste
- Black pepper powder - to taste
- Chili flakes and mint leaves to garnish
- 1Peel and dice the avocado just before making the soup. Drizzle lemon juice all over the avocado while cutting.
- 2Place all the ingredients in the blender jar and process till well blended.
- 3Pour the blend into a bowl and refrigerate for oone hour.
- 4Garnish with chilli flakes and mint leaves and serve.
