    A rich and delicious soup with velvety texture. This soup is elegant, rich, creamy and insanely easy to prepare. Just mix all the ingredients in a blender, blend and eat. Can a soup get any easier than this?

    Ingredients

    • 2 avocados
    • Juice of one lemon
    • 2 spring onion sprigs, finely chopped
    • 2 tbsps (tablespoons) coriander leaves
    • 2 tbsps mint leaves
    • 1 green chilly, finely chopped
    • 1-1/2 cups vegetable stock
    • 1-1/2 cups chilled butter milk
    • 1/2 tsp (teaspoon) cumin powder
    • Salt to taste
    • Black pepper powder - to taste
    • Chili flakes and mint leaves to garnish

    Method

    • 1Peel and dice the avocado just before making the soup. Drizzle lemon juice all over the avocado while cutting.
    • 2Place all the ingredients in the blender jar and process till well blended.
    • 3Pour the blend into a bowl and refrigerate for oone hour.
    • 4Garnish with chilli flakes and mint leaves and serve.
